Yia Vang is bringing his Slurp pop-up noodle shop to the Union Hmong Kitchen (UHK) space within North Loop food hall Graze Provisions + Libations.
Slurp is serving six kinds of noodles – three soup-based and three sauce-based – at UHK Graze all winter, Vang announced on Instagram on Wednesday. That includes the chef’s famous Khao poon, a Laotian noodle soup based on his mom’s recipe.
Here’s how Vang described each dish on the menu:
- Khao Poon: Red coconut curry with chicken and bamboo
- Pork Wonton Noodle Soup: robust pork soup with pork wontons, thin egg noodles and mix of veggies
- Tofu Noodle Soup: Deep, rich veggie soup with fried tofu and thin egg noodles and mix of veggies
- Tim-Tim: Similar to Dan-Dan but named after Chef Timmy with a spicy chili lamb sauce
- Mother Bok-er: Chilled noodle salad with fried chicken
- Duck Duck Quack: Like very cheesy cacao e pepe but with salted duck egg butter on top
Vang initially introduced Slurp as a noodle-only UHK pop-up several years ago, before UHK established its first brick-and-mortar restaurant at Graze in fall 2021.
Slurp came back as a limited-run pop-up in Vang’s Hilltribe commissary and prep kitchen in Lyn-Lake at the beginning of 2023, until it was replaced by Mee-Ka, an homage to the Hmong-American comfort food of Vang’s childhood.
Shortly after those pop-ups, Vang decided to establish Hilltribe, located at 901 W. Lake St., as another UHK location. That’s where UHK’s zoo siab (“happy” in Hmong) meals will still be available during the Slurp takeover at Graze. UHK also has stalls at Target Field and the Minnesota State Fair.
But that’s not all that’s been on Vang’s plate. He’s also been busy shooting TV shows, including “Feral” on the Outdoor Channel, and planning his next restaurant, Vinai, in the former Dangerous Man space in Northeast.
If all goes well, Slurp could stay at UHK in Graze, open from 11 a.m. until 8 p.m., throughout 2024.
