An owner of Cobble Social House is launching a healthy fast-casual restaurant in Downtown East.
Fitchn officially opens Wednesday at 1024 Washington Ave. S on the ground floor of Bridgewater Lofts near Open Book and Day Block Brewing.
Fitchn will serve salads, grain bowls, pita sandwiches and whole wheat wraps, smoothies, fresh juices, and elixir shots. The restaurant features about 16 seats for customers who are dining in, an all-electric kitchen, and a colorful mural of fruits and vegetables.
Joe Clark opened Cobble Social House, a cocktail and sushi bar, at 213 N. Third Ave. in the North Loop five years ago. That’s how he met and got to know Hailie Hoschka, a regular at Cobble and his eventual partner in Fitchn.
Hoschka studied business and marketing education in college and helped out with Nautical Bowls, a Minnetonka-based açai bowl chain that’s quickly expanding nationwide, when it first got started. She will act as the general manager of Fitchn.
There are plenty of healthy, quick options in the North Loop, including Sweetgreen and Crisp & Green, but there aren’t as many in the Mill District area of Downtown East, Hoschka told Downtown Voices on Tuesday.
“We wanted to bring an option over to this side of town,” where there’s also a big residential population,” Hoschka said. “Gold Medal Park is right here, and we thought that we'd get some good foot traffic, especially in the summer months.”
Hoschka said Fitchn wants to fulfill its "fuel good, feel good" motto with nutritious, filling food for the neighborhood.
Fitchn will be open every day from 11 a.m. to 8 p.m.
