David Fhima is bringing a slice of his Mother Dough Bakery to Target Center’s Life Time.
The former LifeCafe, now known as Thrive Bar and Restaurant, serves items inspired by Mother Dough’s menu, some of which incorporate Fhima’s more than 130-year-old starter dough. Life Time will soon debut a new coffee and bar program there as well, according to a Life Time spokesperson.
Fhima told Downtown Voices last week that Life Time CEO Bahram Akradi, his longtime friend, enlisted him to zhuzh up the cafe offerings at Life Time Target Center, where they ultimately decided to bring Mother Dough into the mix.
In addition to owning several downtown Minneapolis restaurants, Fhima also serves as the executive chef of the Minnesota Timberwolves and Lynx. That means he now has a hand in feeding everyone throughout Target Center, from professional basketball players and fans throughout the stadium to gym rats in the subterranean fitness center.
Mother Dough launched in 2021 at Capella Tower, where it’s spread between two floors, and expanded to a Mill District apartment building last fall. Another location is in progress at U.S. Bancorp Center.
Expected to open this spring, the latest Mother Dough will feature a bread commissary that will allow the bakery to double production for Fhima’s eateries and other local restaurants.
Fhima also owns Fhima’s Minneapolis at City Center and Maison Margaux in the North Loop.
